Pineapple Tarts for Chinese New Year

In preparation for Chinese New Year, here's some pineapple tarts! I used the juice remaining from the pineapples to make some pineapple sorbet last week.

Pineapple tarts are a must-have for Chinese New Year. Because habits are hard to break. :)
