Using the left over pineapple juice from making pineapple jam for CNY, I made some pineapple sorbet. Perhaps due to the amount of sugar in this, the sorbet remained scoopable even after being in the freezer for weeks! :)
I added a cinnamon stick into the mixture when I melted the sugar with the pineapple juice, so it REALLY tasted like pineapple jam, in the form of an ice cream.
